It involves ten-odd processes including boiling, frying, re-boiling, washing, and steaming to cook the ham hock, which is then put into the pig"s bone broth and stewed with honey, brown sugar, and rice wine for at least 8 hours to make such a delicacy. Besides, the flavored sauerkraut is indispensable to the dish as it clears off the greasy texture and adds a refreshing tone to the dish.
蹄髈秘制过程复杂,需选用上好的猪蹄髈,经过煮、炸、再煮、洗净、蒸等十多道工序,再佐以特制的骨头汤、蜂蜜、黄糖、米酒,熬煮至少8小时才能制作完成。这道美食,还必须配以当地秘制的酸菜。一素一荤巧搭配,爽口不腻。
The locals concoct such a sensual coupling of the sauerkraut and ham hock as the hock tastes fat but not greasy; the sauerkraut is chewy and refreshing, and the broth has a clear and supple texture.
